The roasted cabbage steaks are so easy to make and delicious. They are made with only four ingredients and can be served either as part of a main course or as a delicious side dish. Cabbage steaks are vegan, but non-vegans will enjoy them as well. They are soft, flavorful, and a great way to prepare cabbage, besides salads or stews.
Choosing The Cabbage
You will learn about the characteristics and how to use each type of cabbage in the text below. There are different types of cabbage; green, savoy, red/purple, Chinese, and more.
Green Cabbage
In salads, stir-fries, or dishes that need to cook for a long period of time, this is the classic and most common type of cabbage.
The cabbage you choose should be heavy, with tightly packed leaves. If it feels light, you may end up with steaks that fall apart.
Savoy Cabbage
The leaves are more layered than classic green cabbage, but are less tightly packed than that.
Even though it has a nice flavor, you can’t roast this cabbage. However, it does make a nice slaw, or can be braised in butter.
Red Cabbage
In general, red cabbage is smaller than green cabbage. It is very tightly packed and feels heavy just like green cabbage.
Red cabbage can also be used instead of green cabbage. Keep in mind that the red cabbage may turn bright purple when cooked. To keep the color, add a little lemon juice.
Napa Cabbage
This is an almost salad-like type of cabbage with a lovely mild flavor. It is excellent for salads, but not for roasting.
Bok Choy
Despite its popularity, you won’t obtain delicious steaks with this cabbage. Although it is great when roasted, you won’t get the same results.
Seasoning Cabbage Steaks
During my preparation, I used very simple spices, but you can season the cabbage steaks however you like.
Here are some of my favorite combos:
-
Powdered paprika, garlic, and onion
-
Black pepper, garlic powder, basil
-
The following spices are used in this recipe: chili powder, cumin, and oregano
Obviously, you can use any combination you like, and cabbage pairs well with most spices.
Serving Cabbage Steaks
As a main dish, cabbage steaks can be served with cooked grains or simply topped with some sauce (steak sauce, hot sauce, or creamy mushroom sauce).
You can pair the steaks with pasta, tofu, or other grilled or roasted vegetables.
Among the grains that go well with cabbage steaks are quinoa, millet, farro, and barley. White and brown rice is also an option.
Tips For The Perfect Cabbage Steak
Even though cabbage steaks are easy to prepare, if you’re not careful, they can go wrong or turn out not as you expected.
-
The right cabbage is the key. Choose a variety that is heavy and has tightly packed leaves.
-
It is important not to skip the oil – Oil helps the cabbage steaks become soft, but it also prevents them from burning, and it keeps the spices intact. Make sure you thoroughly brush your cabbage steaks to prevent them from burning.
-
When you think your steaks may burn, or just want them to be more tender, cover them for the first 15 minutes of baking, then remove the baking paper or aluminum foil and continue roasting until nicely browned.
-
Remember to flip the cabbage steaks and repeat the steps of oiling and seasoning them. You can also brush olive oil and spices on the steaks for an easier method.
