Crabmeat can be classified into five grades or groupings with so many categories and subcategories:

  • There are only two muscles per crab and they are connected to swimmer fins, which is why they are so expensive. Colossal lump and jumbo lump crabmeat are super jumbo chunks of meat. Because it is so pricey, I don’t recommend this recipe because this crab meat is delicious to dip into something.

  • It has a bright color and superb flavor, but is less expensive than colossal or jumbo crabmeat because it has broken up jumbo lumps and large chunks of body meat. It is best for fancy, impression-making dishes, such as poached crab or crab dishes that require large chunks for forks. Lump crabmeat is best used in these dishes.

  • It consists of smaller, broken chunks of meat mixed with white body flakes. It is less expensive than lump crabmeat, but it has good flavor and enough texture to look appealing in dishes, such as crab salads, crab cocktails, and pasta dishes. I went with this type for the crab cocktail.

  • The special grades consist of flakes taken from the body cavity of the crab. They are excellent for crab salads, too.

  • You can use claw crabmeat for soups, tacos, and stir-fries because it is the least expensive and most flavorful.

There is nothing better than crab cocktail for an appetizer. It is very easy to make and requires simple ingredients, plus the crab meat, that you already have in your pantry.

In addition to lemon juice, finely chopped shallots, dill, and creamy mayonnaise, the crab meat gives this simple appetizer a gourmet touch.

It is best served chilled over crispy lettuce with this crab cocktail.

Choosing Lettuce

You can use any type of lettuce with this recipe, but firm, crispy lettuce works best.

Usually, I use gem lettuce or iceberg lettuce, but butterhead lettuce’s core will also work. Look for crisper portions of the lettuce that will hold well and give your crab cocktail some crunch.

Ingredients

  • Meat from 6 ounces of crab

  • Mayonnaise, 3 tablespoons

  • Tomato paste, 1 teaspoon

  • To taste, salt and pepper

  • Finely chop 1 shallot

  • Chop 1 tablespoon of parsley

  • As desired, chop the dill

  • Cut one lemon into quarters

  • Shredded baby gem lettuce

Instructions

  1. Combine mayonnaise, tomato paste, parsley, dill, shallot, and salt and pepper to taste.

Gently stir in the crab meat, being careful not to break it up.

For 20 minutes, chill the crab mixture.

Serve the lettuce in a bowl with two lemon wedges and salt.

The lettuce should be divided between two serving glasses or bowls after being mixed together.

The crab meat mixture should be topped on top of the lettuce.
