Cooking for two does not always feel particularly decadent. Even if you bake a piece of salmon or a chicken, it may lack some of the luxurious feeling that you get when preparing something for a crowd. This problem is solved by these delectable salmon lasagna rolls! With a few simple ingredients, you can make a delicious dish for two. These salmon lasagna rolls are made with flaky salmon, spinach, and mascarpone, and then topped with a delectably creamy sauce. This decadent lunch or dinner option is ideal for two people and requires no large baking dishes!
What Makes This Recipe Great
Although I really like lasagna, I actually prefer these rolls. Why? It takes time to make lasagna because each layer must be carefully prepared and put together. Simply put, this recipe doesn’t! You can easily make a lasagna dish using the salmon lasagna rolls because they are less difficult to prepare.
Salmon is much simpler to prepare than chicken because it can be used already cooked and flaked (a brilliant use of leftovers). Salmon is simpler to cook than meat or poultry. It takes time to make homemade Alfredo sauce, so if you think you can save time by using jarred Alfredo sauce, don’t.
Instead, give this recipe a few extra minutes and create a creamy sauce from scratch! It only takes a few minutes to thicken by melting butter in a saucepan, adding some cream and some minced garlic, and stirring occasionally. Any pasta would go well with this delicious sauce, but these lasagna roll-ups are especially delicious!
How To Bake Salmon
You can skip this step if you already have some leftover salmon. However, if you’re working with fresh salmon, the simplest way to prepare it is in an oven or air fryer! To bake salmon in the oven, follow these steps: Preheat the oven to 450 degrees Fahrenheit. Using parchment paper, line a baking sheet.
Place the salmon, skin side down, on a baking sheet. Drizzle with olive oil and season with salt and pepper to taste.
Bake for 12-15 minutes, or until the salmon flakes easily.
To make salmon in the air fryer, follow these steps:
Preheat the air fryer to 400 degrees Fahrenheit. Rub the salmon with olive oil and season with salt and pepper to taste.
Place the salmon in the air fryer and cook for 7-9 minutes, depending on its thickness.
The salmon is ready to use when it flakes easily.
Fresh Vs Dry Lasagna Sheets
I chose to use fresh lasagna sheets for this recipe. Fresh lasagna sheets are my favorite because they are adaptable, don’t need any additional cooking, and simplify the process. They’re also easily accessible in the majority of stores! Unlike when making traditional lasagna, the sheets for lasagna rolls must be flexible to allow for neat rolling. You can use dried lasagna sheets if you can’t find any fresh ones.
You must cook the lasagna sheets before using them because they are very stiff when they are dry. Make sure they’re not overcooked and that they’re cooked al dente. If you overcook your lasagna sheets, they might break apart during the additional baking in the oven, or your lasagna will turn out soggy.
Fresh Vs Frozen Spinach
I used fresh spinach in this dish, as you can see. I was hesitant to use frozen and thawed spinach because of the amount of water they might release. If you don’t have fresh spinach, you can substitute frozen and thawed spinach — just make sure to thoroughly drain it! Nobody wants a soggy lasagna.
Lasagna Vs Lasagna Rolls
Making lasagna rolls doesn’t require as many layers as making traditional lasagna. Instead, you merely layer everything onto a lasagna sheet and tightly roll it up. Flaked salmon, spinach, cream cheese filling, and lasagna sheets are all you need to make these lasagna rolls. We’ll go into more detail below.
Fresh spinach and flaked salmon should be placed on a lasagna sheet after the cream cheese filling. The lasagna sheet should be rolled up and put in a baking dish. In order to fill your baking pan, repeat the process with the remaining ingredients.
Pour the Alfredo sauce over the lasagna rolls after making it. Sprinkle some mozzarella cheese on top and bake the dish until the top is bubbling and golden. Prior to serving, let cool briefly.
