1 cup essential wheat gluten
fourteen cup chickpea flour
1 cup of water
14 cup soy sauce 6 cups vegetable broth
2 tbsp unfiltered apple cider vinegar
2 tablespoons maple syrup
2 teaspoon liquid smoke (optional)
1 teaspoon garlic powder
To make the cooking broth:

5 cup veggie broth
1 teaspoon dried thyme
14 tbsp soy sauce
Season with salt and pepper to taste.

Instructions

Chickpea flour and essential wheat gluten should be combined in a mixing bowl. To create a soft dough, add water and stir.
On a kitchen surface, knead the dough for five minutes. Give the dough five minutes to rest.
Bring the ingredients for the broth to a boil while the dough is resting.
The broth should simmer with the heat down. Large portions of the dough should be cut up and added to the liquid. For one hour, simmer the broth. The cooked seitan should be removed and left to cool. This seitan is now ready for cooking or frying as desired.
