Although I love so many different recipes, those that are ready in ten minutes or less are my favorites. You can make this recipe in 10 minutes with simple ingredients, so there’s no wonder I recommend it to all my friends.
With the combination of the cheeses, this dip is clump-free and silky. Upon cooling, this recipe can be reheated again to become silky again. It’s one of those recipes you can’t go wrong with!
How To Choose The Right Ingredients
Some recipes allow you to swap ingredients without compromising the texture, but others must be followed exactly. This dip needs to be made exactly as it is written. If you think you can swap ingredients or use cheese with less fat, I cannot guarantee perfect results.
Mozzarella Cheese
To make a perfect stringy cheese dip, you should always use whole milk mozzarella cheese. You can use a block or a ball of mozzarella, as long as it is whole milk.
American Cheese
Good American cheese is made from very young cheddar or Colby and does not contain a lot of additives. Whether you grate the cheese or cut it into small cubes, it will melt perfectly.
Milk
The texture of whole milk is very creamy and it holds up well to heat. When I overheated my low-fat milk a few times, it curdled and destroyed my cheese dip. If you only have low-fat milk, make sure to not overheat it.
Chives
Chives are not necessary for this recipe, but they do add a mild onion flavor that complements dairy and adds some color and dimension.
What Else Can I Add?
There are a few things you can change about this recipe. Here are some of my favorite spices and add-ins:

As with chives, shallots lend a mild onion flavor. Add them to a dry sauce pot and cook briefly until they release their flavor.

You can elevate your cheese dip to another level by adding a pinch of cumin.

Can I Use Other Types Of Cheese?
For the cheese recipe, you should stick with American cheese. Other cheeses have different textures, and you will get clumpy results if you use cheddar. Instead of mozzarella, you can use Oaxaca cheese, but the recipe will no longer be mozzarella queso dip. The mozzarella in this recipe is here for a reason. American cheese gives a smooth, creamy texture, whereas mozzarella gives a melty, stringy texture.
Gooey Mozzarella Queso Dip

Ingredients:

Cubed or grated 0.5 lb American cheese

A 0.3 lb block of mozzarella cheese

Whole milk, 1/3 cup

To taste, salt and pepper

Chop 1 tablespoon of chives

If desired, add cumin
Instructions:
Cut cheeses into small cubes or grated them.
In a sauce pot, heat the milk until it begins to simmer.
Add salt and pepper to taste and add both types of cheese.
The mixture should be smooth when it is lowered the heat and stirred.
Adding cumin, jalapenos, or salsa after the cheese has been smoothed is optional.
Top the cheese dip with chopped chives and serve immediately.
