Sweet Potato Sushi (Vegan Sushi Recipe)

A sweet potato sushi roll (sweet potato maki) consists of roasted sweet potatoes and sushi rice. It is called Makizushi, or a maki roll as we know it. There are no animal products in this sushi, making it suitable for vegans and vegetarians alike. If you desire, you can serve this sushi with some wasabi and dipping sauces.

What Are The Key Ingredients?

Sushi is primarily composed of rice and sweet potatoes, both of which should be prepared to perfection.

Sushi Rice

The technique for making sushi rice is by combining hot, cooked short-grain rice with sugar, salt, and vinegar, which is then cooled and used in sushi.

Whether you prepare sushi rice on the stove, in the microwave, or in a rice maker, as long as you season 1 cup of rice with:

  • Rice vinegar, 2 tablespoons

  • Sugar, 1 tablespoon

  • Salt 1 teaspoon

Make sure your sugar is dissolved within the vinegar before seasoning the rice. I usually warm rice vinegar with sugar and salt in the microwave for 30 seconds until the sugar dissolves.

Mix the vinegar with the seasoning and drizzle over the rice.

Even though roasting sweet potatoes is easy, people sometimes get carried away and make mistakes.

Here are some of the general rules I follow:

  • Don’t skimp on oil or butter, or your sweet potatoes will stick to your baking sheet and become dry.

  • If your potatoes have room to let off moisture rather than steaming on top of each other, you will get more color.

  • Sweet potatoes should be roasted until they toast. Don’t flip them or stir them until they have a little color on the edges. Color is a good indicator of doneness, but it’s also a good indicator of taste.

You can season the sweet potatoes as you like, but here are a few tips that can enhance their flavor:

  • Make sure you use flavored oil – Don’t limit yourself to olive oil alone. Use herb flavored oil or garlic oil, or nut oil while the potatoes are still warm after roasting.

  • Roasting sweet potatoes with apple cider vinegar or orange juice (added with oil) will create a nice caramelized glaze.

  • You can enhance the flavor of the sweet potatoes by using spices like chili powder, nutmeg, and garlic.

How To Serve Sushi

There are many different sauces that pair well with sweet potato sushi. Here are some that we recommend.

  • A sauce made with Sriracha, mayonnaise, and honey. Use vegan mayonnaise and maple syrup for a vegan version.

  • This is a beautiful and tart dressing that can be used as a sauce. It enhances sushi and pairs well with any vegetable.

  • The chili crisp sauce is a crispy and spicy sauce made with garlic and fried chili peppers. It has a crunchy texture and an umami flavor.

Ingredients:

For the rice:

  • Rice cooked to 2 cups

  • Rice vinegar, 14 cups

  • Sugar, 2 tablespoons

  • Salt, 2 teaspoons

For the sushi:

  • Nori sheets (2)

  • Back sesame seeds, 1 tsp

  • Sweet potato (one)

Instructions

Cut the potato into 12 inch thick pieces and roast them at 425°F for 15-20 minutes.

In a microwave-safe bowl, heat rice vinegar with sugar and salt for 30 seconds. Stir until sugar dissolves. Season rice with rice vinegar and mix well.

Spread half the rice over one nori sheet on a bamboo mat.

Sesame seeds can be sprinkled on top.

On the narrow side of the nori sheet, place half of the sweet potato.

Roll the sushi by lifting the bamboo mat all the way through. Repeat with the remaining ingredients.

Make individual sushi bites by placing the sushi on a cutting board and cutting it into small pieces.

You can serve it with your favorite dipping sauce!
